I had read about Paci's in South Tampa, and decided to try it for "real Brokklyn" pizza. What a dissapointment, it still lacked the crispy foldable pizza quality of a new york style pizza. Although the topics were plentyfull, and it was an 18" NY style, the dough was chewy as I have found in most Florida pizza's. It has not convinced me that Cappy's in SOHO still does the BEST NY Style pizza i grew up with. I have yet to try Cesaer's, are there any others i should try? Westshore actually comes close, but still has that chewy crust. IM interested in pizza that has the "burnt" but not actually that comes from the type of ovens used in the pizzaria's from NY. I know its difficult to mirror the dough.
