Does anyone know where I can find grassfed, organic, or, at the very least, high quality lard that won't hurt my checkbook? I'm a student looking forward to Christmas tamales but not preservatives or hydrogenated oil.
I've also given the idea of rendering my own lard some thought. Any insight into the art of rendering would be greatly appreciated.
While I'm asking - does anyone know where I can find good quality suet? Working with animal fat is an exciting, new development in my culinary self-education.
