I have an upcoming January trip to Tokyo and have a slot for a Sho-style sushi meal. I have narrowed it down to Takumi Shingo or Sushi Sho Saito. I have previously been to Sushi Sho and liked it - though the seemingly random sequencing took some getting used to, there were some truly fantastic bites (not the least of which was the ankimo sushi with pickled melon). A few queries:
1) I understand that Shingo-san took care of the Yotsuya mothership when Nakazawa-san moved to Hawaii. Is Shingo-san back at his namesake restaurant?
3) What is the profile of shari like for the two restaurants? Do they both practice aging for neta?
4) Lastly, if pushed, which of the two restaurants would you prefer for a January winter meal?
