tacos de azadura - anyone heard of or tried them?

Has anyone heard of or tried tacos de azadura?

I had them at a tacqueria in white plains NY a while back. The place serves regional cuisine from the yucatan area.

I had never heard the term "azadura" before, so I decided to try them. Unique taste that had to be chicken liver, which I love. The tacos were quite good.

I thought the spanish term for liver was hidago or something like that. But this was clearly called azadura. Anyone know more about this dish? Anything about it? Where the term azadura comes from?
