taco-judging criteria?

I have a mission: to eat a taco at every taqueria in Redwood City, California (where I live). There are a bunch of them, at least 20, so I'm going to do this slowly over the next few months. I'd like to come up with some good taco-judging criteria so that I can make up some score sheets and post my results on the best tacos, and then maybe have a taco-taste-off for the top five or something.

What criteria do you suggest? I'm just talking plain small corn tortilas with meat and maybe some onions and sauce or lime juice tacos. Obviously each kind of meat should be judged seperately, since it's not really fair to compare carnitas to pollo or the like, but what else should be judged?
