"Sustainability" in restaurants

We recently dined at a California restaurant that claimed to be "sustainable and touted its "local" ingredients on the menu. How can a restaurant advertise this message and still import about 80% of it wine on the wine list when we were there?
Think of the carbon footprint that is used to fly all that foreign wine to the California shores when in fact this restaurant is in one of best wine regions in California!
