Sustainability in Jacksonville

How do you think a sustainably oriented, farm to table restaurant would do here in the Jacksonville area? Is it overdue, or are the dinners here too in love with chicken wings and coors light? Looking to open this concept, but have been told too many times that people wont get it. Looking for feedback.
