Returning home to NY in 2 weeks for a short stay and have a reservation at Sugiyama. Any advice on choosing between the 8- and 10-course modern kaiseki vs. Chef Nao's 6- or 8-course modern kaiseki vs. omakase kaiseki would be greatly appreciated. Also, I'm not a red meat fanatic but I am interested in any comments on Sugiyama's use of Kobe beef. Is it "worth" the $150?
