Substituting agar agar for gelatin

Louise Z. | Feb 9, 2004 10:36 PM

Thanks to those who posted last week in response to my query about finding a vegetarian substitute for gelatin. I am now the proud owner of a small bag of agar agar. So, how do I substitute it for gelatin? The recipe I'm using (for a fabulous spread called tomato flan) requires four teaspoons of gelatin. Should I just use four teaspoons of agar agar? My gut says no. Any ideas?
