Lisa and I have been to Hibino a few times since it opened early this year, and the one thing we always order is the tofu. Now, I know there are a lot of tofu enthusiasts and experts out there. Don't know too much about the intricacies of the tofu world myself, but I do know that this version is delicious. It's served in a little bottle of sorts, with a spoon and a carafe of a vinegared amber liquid. You're supposed to take a few bites, and then re-fill the jar with the stuff. Anyway, if you haven't tried it, I would recommend it highly. And does anyone know the vocabulary (I mean, is there a name for this particular presentation, and what is the liquid)?
