A sublime salad

Last night I had occasion to have the special appetizer salad at MAX in Sherman Oaks. It was simply butter lettuce with cucumber, avocado, orange, tomato, topped with fried scallions with a green goddess dressing the likes of which I've not had since the Cafe at Chez Panisse (one of the hallmarks of great restaurants is that they sometimes surprise us with familiar even retro dishes). This one was done right: capers, anchovy, cilantro, tarragon and mayo (maybe even sour cream). $8.50. It must be getting close to lunch time.
