Squash, Leeks and apples: How would you improve this recipe?

I want to make a vegetarian side dish for my friends. Butternut squash, leeks in sherry and apples sounds nice but I think it needs something else. What do you think?

3 tablespoons extra-virgin olive oil

Coarse salt and ground pepper

Saute some sliced leeks in 1/2 cup dry sherry
Add 1 tablespoon chopped fresh sage, plus leaves for garnish

1 pound butternut squash, peeled, seeded, and sliced 1/8-inch thick layered

1 pound apples, such as Gala, Cortland, Baldwin, or Macoun, peeled, halved, cored, and cut into 1/8-inch thick slices over the top

Bake for 45 minutes, uncover and sprinkle with
1/2 cup freshly grated Parmesan cheese

It sounds a little bland. Should I add some cream or eggs? Skip the parmesan and try cheddar instead?
