Spanish horchata at A&H Seafood--clue me in

To satisfy my curiosity, I bought a bottle of horchata de chufa de Valencia at A&H, which I hadn't seen there before. The older of the two brothers was alone in the store, and not only had he not tasted it, he couldn't tell me what chufa is, other than that he thought it was some kind of plant.

It is similar to Mexican horchata (rice milk) in some ways-- slightly creamy, sweet white liquid, but it has less pronounced vanilla and cinnamon flavors and a slight nuttiness that Mexican horchata does not have.

Can anybody out there tell me what chufa is?
