I know there is something peculiar about the bacon in Spain (in Andalucia, anyway). It's truly amazing, and I've never had anything like it before. But I've been googling for months now to try to purchase it, or make it myself. I just can't find any information that is specific to that bacon. Now I'm starting to wonder if perhaps there is nothing special about the bacon other than the fact that it comes from the pigs in Spain (Andalucia specifically)! I've read about the various pigs, and how some feed on acorns, but that was in the context of Iberian or Serrano Ham, not bacon.
Even the Spanish restaurants in Toronto don't serve bacon-wrapped figs or dates, and in fact, most don't use bacon at all.
If anyone knows anything at all or knows of links or experts, anything, please let me know. I'm getting desperate!
