So I was in a grocery store and I saw a product that I had never seen before: soy grits.
Now, being a belle born, I love grits. But I have pretty much stopped eating them because they are, by and large, nutritionally empty. Being of the vertically challenged persuasion, I can only eat so many calories a day without resembling Shamu. I am a Florida girl, but Shamu is not the body type that I wish to emulate.
I bought the soy grits (Bob's Red Mill brand). I left the package on the counter for over a week hoping that the Spousal Unit (who does most of the cooking) would experiment with them. I knew that he wouldn't and he didn't disappoint me. So tonight I took a much overdue turn at the stove.
The soy grits didn't figure into the meal plan but since I was working in the kitchen I decided to make up the basic recipe for two servings. I followed the basic recipe pretty exactly (except the part about boiling over on the stove early on). It never absorbed all of the water. It's been a couple of hours. I have returned the grits to the heat and simmered them longer - MUCH longer. There's still unabsorbed water on top of the "grits."
Have any of you cooked soy grits? I'm interested in knowing what I did wrong.
The basic recipe calls for 1/2 cup of grits and 1/2 tsp of salt added to 2 cups of boiling water. Reduce heat and simmer 12 minutes. Let stand 5 minutes off of the heat.
