Sourdough Starters - Is There a Difference?

The current thread about sourdough starters has me wondering. Is there really a difference between some old starter made with potato cooking water and flour and some of the much vaunted San Francisco starters or starters made with grapes etc.? Or is the real difference in the recipes, procedures, and ingredients used? Or maybe how old the starter and how often used?
