I need help choosing some new fry pans for our glass-top stove. I recently got tri-ply Tramontina 10- and 12-inch fry pans, and they don't fry evenly at all. Lots of variation between the centers and the edges. I also have this trouble with cast iron. In the past, I had Calphalon ang Magnalite hard-anodized aluminum sauté pans, which worked much better, but they eventually lost their anodization, I guess, which worried me, so I got rid of them (probably because I put them in the dishwasher sometimes). Anyway, I cook often for a family of 5, and I am frustrated. The Tramontina tri-ply saucepans work pretty well, but the fry pans do not. Please help! What would fry evenly?
