Song Ngu in Milpitas for Snake River Farm Wagyu Pho

For last month’s dish of the month, I reported on the banh xeo cuon (Vietnamese crepe served in roll form) at Song Ngu in Milpitas,

In addition, I’ve also tried:

Bun ca xao nghe, $8.95 – Turmeric fish with rice vermicelli was topped with a plentiful amount of yellow-stained, dusted and sauteed fish filets. Good job on the bun with loose rice noodles and not a lot of water sitting on the bottom. The nuoc mam that accompanied this was spicier than the one served with the banh xeo cuon.

The grilled scallions and the softened but not mushy sweet onions made this version particularly good. The bun had a sneezing amount of black pepper sprinkled over.

Pho Kobe Beef, $10 (small) – The house specialty features Snake River Farms American Wagyu. Beef stock is relatively light and not overdone with anise or cinnamon. I’d asked for the slices of tai served on the side. One thing I hadn’t thought about was that this selection had no other beef cuts in the bowl, making it rather austere particularly in the absence of sugar or MSG. The thin, dried noodles were firm and loose, garnished with just cilantro scallions and no slivers of white onion. The plate of fresh herbs included basil, plucked bean sprouts, jalapeño and lemon.

The meat was not as well-marbled but was cleaner tasting than the Kobe-style offering at Pho 90 Degree in San Jose, reported here,

For those who like to order tai alone, this might be the ultimate. For my own taste, the better way to go would be to choose one of the pho bo combinations, and then pay the $5 supplement to add a side of Wagyu.
