What else to do with smoked scamorza?

I made a delicious potato and pasta dish with smoked scamorza tonight. But I still have a large hunk of the cheese left and want to do something good with it. The only recipes I've seen on Chowhound and with a google search involve grilling the cheese, but I'd rather use it in an entrée if possible. Anyone have any ideas?
