I've never tried the low and slow method, have you? Any advice?
I love the Petrini roasted turkey recipe I've posted here before. (At the beginning, you make a paste of butter, white pepper, paprika, salt and smear it on the turkey. Cover with damp cheesecloth. Halfway done, you heat slightly brandy and white wine and pour over turkey. This year, I've ordered a fresh 13 lb Butterball from Safeway and I want to do it Petrini style except low and slow.
I looked at howtocookathanksgivingturkey.com and he says to preheat to 475, put turkey in for 20 minutes and then reduce heat to 250 for the rest of the time.
