I saw some beautiful looking skate at the fishmonger's the other day, but I don't know what to do with it. Searching on line for recipes didn't give me any real information about special preparation (Should I get it skinned? What about bones?) and I didn't find anything that sounded great in the way of recipes.
I really don't want deep fried although lightly sauteed could be all right, and I don't want it drowning in browned butter with capers which I don't much like.
I often make fish dishes downscale "en papillote" which is to say, I use foil! And I adore vegetables. Any ideas? What special things should I know about working with Skate?
