Simply Cream Cheese

You must tell me please. Cream cheese, about the cream cheese. I've switched to goat cheese and for many recipes it just doesn't work. Five years ago I called so many places, even upscale bakeries to see if they had a source, but no one had a clue. I almost found one last year, but it had powdered milk. To me dry milk tastes like dry milk, but still that's what I'm going to use this year. I was really hoping organic cream cheese would be what I wanted, but sometimes organic dairy is ultra-pasteurized and tastes like nothing, and it seems like recently organic is allowing gums.
