Hello, I was in shanghai recently and I got to try out their shanghai shen jian bao/mantou (上海生煎饅頭), it differs from the taiwan/hk version because the dough is slightly different. It was closer to dumpling dough than the usual seng jian bao dough, also, it has soup inside which is very similar to the xiao long bao.
In essence, its a cross between the xiao long bao(小籠包) and seng jian bao(生煎包), its cooked similar to the seng jian bao because its fried and then steamed, but when u bite into it, it like ur eating a bigger version of the xiao long bao.
I was wondering if anyone has the recipe for this, specially for making the dough because I have been experimenting with it for a while now and I cant seem to get it right.
