I can get my hands on some baby octopus. I'm thinking of making baby octopus salad.
I have 3 questns:
1. Do I cut off or otherwise clean (what seems to be) the head?
2. how long do I simmer them?
3. Anyone have a specific recipe? I made some the other day, dressed w/ EVOO and wine vinegar. But I only cooked them for about 8 mins and they were *very* rubbery!
