(SEA) Cheap, good and new?

A couple of friends and I are looking to try something new. Distance from downtown Seattle/location no object -- we're willing to travel. Ethnic a plus and hole in the wall no deterrent. Money, however, IS an object, so inexpensive recs only, please. Also, one of the people in the party is a vegetarian (who claims she can find something to eat on any menu) so not too meat-centric.

I have been to reliable Chow faves Szechuan Five Star Pepper and Tamarind Tree and would love to go somewhere I haven't been.
