Sauerkraut on New Year's Day

I knew about lucky food on New Years such as black-eyed peas or hoppin john. However, this is the first I've been aware of saurkraut.

It seems either German or Pennsylvania Amish people have pork and kraut on 1/1.

Theories are the pig always looks forward to the future and can't look back without turning around. Cabbage ... well, that is a word that is sometimes used for money.
