Been looking at the notices for the opening of Santoka Ramen at Mitsuwa Marketplace for a little while in the Japanese papers. Grand opening is set for Friday (9/16) and they're running a special for the first 300 customers on Friday, Saturday, and Sunday for a free ramen ticket for your next visit. Santoka (or Santouka) is a ramen chain originally from Hokkaido (the northernmost island of Japan) and they specialize in a thick shio ramen (salt flavored) that is intensified with a pork bone broth. While they do serve other styles of ramen, like shoyu (soy) and miso, their main product is the shio ramen. If this chain outpost can be as consistent as the ones I've tried in LA and Tokyo, it's probably the best ramen you'll find in the NYC area. The cha-shu just melts in your mouth.
