In my job, we need to store a lot of greens, like lettuce, for several days. We need to find a way to keep them organized and as fresh as possible. Does anyone know whether a plastic container would be any better or worse for freshness than plastic bags? Do restaurants have any special way of storing greens? Googling around for storage containers to buy, I haven't found anything in restaurant supples that is special for greens, and the only person I've run into lately who works in a restaurant says they have the greens for that day delivered fresh every morning, which doesn't help us. Am I missing something?
