A dilema for all to ponder:
I'm making Afghan aushak tonight. They're dumplings with a scallion/red pepper filling, served with both garlicky yogurt sauce and a tomatoey meat sauce.
As a side, I'm making a simple soup of pureed cauliflower and chicken broth with very little seasoning.
I'd like to serve some greens to round out this meal, but am at a loss as to what dressing to serve with it. Normally I'd just do a balsamic or citrus vinaigrette, but my poor boyfriend hates vinagrettes and has been putting up with my love of them for a few weeks. If we had things his way, I'd whip up something akin to thousand island. But really, thousand island with that menu? Ick.
Maybe caesar? More exotic ideas more than welcome.
