Thanks for all of the help and suggestions. We had a wonderful time in Italy. Here's some brief feedback that might help others planning a trip.
Trattoria Monti--Standouts were the red onion flan with gorgonzola sauce and duck in a bitter orange sauce. If we had more time, we would have returned.
La Gensola--Super fresh fish and seafood perfectly prepared. I'm still thinking about the spaghetti with clam sauce and the grilled calamari which was carmalized. Great service, just loved it.
Pizzarium--Yep, it is as good as everyone says and worth waiting in line and standing to eat. My favorites were the zucchini flowers and the eggplant parm. Wish I had some now.
La Tazza---the coffee granita with whipped cream was terrific. It replaced gelato for the evening.
La Pergola--The view of Rome at sunset was amazing. The breads were the best we had on the entire trip and the cheese course was terrific. The food was very good, as was the service. But I think a 3 star should offer better than just "very good:. It didn't compare to Le Cinq in Paris and I think for those prices there should be more of a wow, then a water list and a selection of salts.
Sostanza--The artichoke omelet was probably my favorite dish. I wish I knew exactly how to make it. Butter chicken and steak florentine were also as good as I had heard.
Vini E Veeci Sapori--loved everyting about this place. The waiter explained each dish. We had pasta with duck and another pasta with zuchhini flowers. A fried beef dish and ossa bucca. We would have returned if we had another night. Make reservations it is tiny.
Perche No---the black currant was so excellent that I had it twice in one day. The chocolate was terrific too. It was near our hotel and it was our favorite place of all the gelato we tried.
Cantinetta dei Verrazano the sampler of foccacia was still warm from the oven. In particular the one that was stuffed with fresh peas. Best bread with had in Florence.
Cafe Riviore--dark and really delicious. It is the Angelina's of Italy
Le Volpe e'Luva---Fresh salads and appetizers before the Opera at St. Mark's
Cooking Class---Giglio Cooking School---a morning of making and then eating fresh pasta. Loved it.
