Reuben, Patty Melt, Banh Mi

Reading these CH threads is dangerous; discovering too many new and delicious things to eat.! Back for more sandwich recs...

1. Reuben. Love them. Where can I find the best ones? Not looking for an obscene pile of meat.

2. Patty Melt. Ok Beach Chick I think I can blame this one on you since I've seen so many mentions of your undying love for them. I've never had one (shocking yes), but I'm craving one! So what makes the perfect patty melt and where can I find me some patty melt heaven?

3. Banh Mi. Another true confession, I never hear of it until I read about them here and finnaly had my first one at Cali Baguette Express in Mira Mesa last week. Wow now I know why they get so many mentions. Where has that baguette been all my life?! I feel deprived for missing out on it all these years. Had the grilled beef and it was such a yummy sandwich, although very light on the carrots, maybe 5 grated shreds and other veggies and i wanted more.
I've read the threads about some of your favorite places to get one, but i'd like to know what sandwich filling you go for. I don't like pate so no need to mention those options, but If you have other favorites please share.
Also besides the unique baguette, what else is required for a true banh mi? The carrots and cilantro sprig, and ??

Thanks for all the recs. It's been a fun summer of trying new things around the county.
