Restaurant planning, help

I am planning (rather exhaustively) a trip to New York this fall. I want to try all new places for dinner/lunches, so I need some really good palates to weigh in. I want good food, but don’t want to eat the same sort of meal every night. Before I start with the reservation process, I need help. Also, we are staying at the Waldorf, so anything great and close that I’ve overlooked would be most welcome.
PS I’m taking someone who has never been to NYC, I’d like it to be a special experience.

Gramercy Tavern
Nobu (sushi virgin, want to try really great sushi somewhere)

Otto’s Pizzeria
A deli (don’t know which one yet)
