Replacing only countertops and sink - what steps?

We want to replace just the countertops and sink (and disposal unit) in our 43-year old kitchen next month. The floor plan / layout, cabinets and appliances are all staying.

Sink replacement involves plumbing, especially if I change style of sink from double-bowl to single. So I'm expecting we'll be without running water for a day or two.

But will I need to empty all the lower cabinets/drawers and move the stove and fridge to allow access for replacing the countertops? If you've had to pack up a kitchen for a remodel, what advice can you give?

I may be over-thinking this - as a retired project manager I'm used to doing lots of step-by-step planning before a "go-live". My spouse, a retired engineer, is quite action-oriented - get started and deal with things as they arise is his preferred approach. Since I'm the one who cooks, I'm concerned we'll find ourselves with a non-functional kitchen for weeks if we sequence this wrong, or when we find unexpected / missed construction components.
