Recipes for homade Mustards

I'm looking for a few tried and true recipes for making my own homade mustards. For my first attempt, I used Penzeys Regular Canadian Mustard Powder, which is described as having medium heat. The recipe stated it would be very hot when first mixed, but that it would mellow with age. Even after 2 months, it didn't! It was way too hot, and I love heat!!! Any suggestions? TIA
