Any Recipe Suggestions or Ideas?

Okay... so...

I'm looking to make myself a little lunch at some point in the very near future. Here's the main ingredients I plan on using:

1/4 cup Couscous (that's a single serving size)
Chanterelle mushrooms
Black trumpet mushrooms
Crimini mushrooms

In terms of sauces and seasonings, we have basic stuff. I could go Asian with a Thai peanut sauce, soy sauce, orange sauce, sweet & sour sauce, or miso paste. Or I could go another direction, as we have multiple kinds of dressings, Worcestershire sauce, vinegar, cooking sherry, salsa, mustards, and a decent amount of spices and herbs.

I'm not planning on putting any meat (I include fish when I say "meat", by the way, because I think it's relatively stupid that fish isn't considered meat when it pretty clearly is) in this, though. Just FYI.

I admit I'm not quite sure what we have in terms of veggies. I only recently moved back in with my parents, so I'm not quite knowledgeable on the contents of the kitchen, yet. So it's possible I missed things and that you may suggest something we don't have. I'll update this stuff in the comments.

I know how to prepare couscous. I usually go two ways with couscous, depending on what I want with it:

As a side, I basically put the 1/4 cup of couscous in a bowl, boil water, add a little oil and/or butter and/or salt and/or other spices to the couscous for taste, add 1/4 cup of the boiling water to the couscous, then let it sit, covered, for five minutes.

If it's part of the main dish, however, I'll usually just boil the 1/4 cup of couscous in half a cup of water or some other liquid (like a broth) or my own liquid mix and whatever else I'm including until the liquid is mostly gone.

I'm only making a single serving and not looking to get all that fancy.

So any suggestions? What do y'all think? What would you do?
