It will be my husband and me for New Year's Eve so we're going to try out some recipes that have interested us. So my first dish will be the raviolo with an egg yolk inside. One I saw had a dollop of ricotta/parmesan inside with a well in the center for the yolk. The other did the same using a finely chopped spinach saute with garlic. I'm thinking of the first one, on a bed of wilted spinach, with crumbled bacon on top. Any thoughts on other filings/combinations? And should it have a sauce other than some olive oil or a browned butter? What do you think? Thanks.
