So, I have a neighbor who makes excellent ratatouille. She apparently knows it, and has spent years telling me she'll give up her secrets, but hasn't. Yeah, one of *those* fair weather cooking friends. I give up.
Today, I started looking on line, and the prep by Alice Waters gets a lot of love. But the dice (1/2") sounds small, and the final "all together now" cook--10-15 minutes--seems long, at least for the eggplant.
I'm curious what other Hounds who pride themselves on their ratatouille do, especially any secret hacks they use (Waters' supposedly is a bouquet garni entirely of basil).
