During the week, we have little time to cook, but still like to whip something together ourselves. Slowly we've been developing a set of "go to" meals that are pretty quick to make, are relatively healthy, and (most importantly) are tasty.
My current favorite: guac docs.
We get some pre-cooked "healthier" sausages (like a lower-fat Turkey kielbasa, or an Amy's brand chicken sausage). While they're heating up and browning on the stove top, we quickly make some guacamole (we use lemon and oregano, instead of more traditional lime, red onions, etc) and toast some buns. Throw the sausages in the buns, top with the guac and voila. It takes about 5-10 minutes to make, isn't too bad health-wise and has been tasty enough that we've been eating it once a week.
I thought I'd hit other people up for some new ideas.
Anybody got any good ones?
