Need quick help with Cook's Illustrated pot roast

Am in the process right now of making the above pot roast for the first time. My immediate question is: what if I skip the 1 cup chicken broth and add 1 cup red wine? (Along with the 1 cup beef broth.) I DO have the chicken broth but just wondered...

Second question: I had really wanted to cook potatoes, onions and carrots with the roast, but this recipe doesn't call for it (just a mirepoix under the roast, as I think you-all call it). Could I still add the veggies, should I add them later, or cook separately? If separately, any good ways to cook on stop of stove while roast is in the oven? (I had wanted roasted veggies...)
