Question on Philly Pork Sandwiches

Can anyone tell me what cut of pork they use for these sandwiches. Perhaps they roast a boneless center cut loin of pork and slice it to order? Perhaps a fresh ham? Or, perhaps some other less expensive cut like a butt and then let it sit in a broth sort of like the Italian Beef, which is famous in Chicago.

Incidently, gives the place you are all raving about for cheesesteaks and pork sandwiches

I have never been to Philly despite living in NJ for 20 odd years. So, all I know is what I see on FoodTV and what I've read. Kind of interesting that you guys don't think too much about the two places that get all the press for their cheesesteaks...Gino's and Pat's. they sure make them look great on tv though.
