Question about Dim Sum Practice/Etiquette

David Kahn | May 24, 200602:20 PM

A couple of years back I tagged along with Russkar to one of the big Hong Kong seafood places (maybe NBC?). It was late in the afternoon, and they were no longer serving dim sum, so we ordered a bunch of stuff off the menu, including a whole king crab cooked three ways. That damn crab was literally one of the best seafood dishes I've ever tasted, and ever since, I've been jonesing to go back and order this again. The thing is, these days, I mostly get out to this part of the city at lunch time when the dim sum is going strong.

So, my question is, in the big Hong Kong style seafood places in the SGV, is it permissible to order a live king crab at lunch time while the kitchen is pumping out dumplings, or will attempting this make me the object of scorn and derision?
