In praise of Fritz, a skilled butcher

I have lamented the passing of Chalet Gourmet (Sunset and Fairfax) on these boards before and complained of the changes wrought by Bristol Farms when they acquired the store. After going through difficult times, the store seems to have regained its sense of self and the service is once again excellent.

Fritz, the butcher, dates back to the Chalet days. Last Sunday night at 7:30 p.m. we wandered in and asked him to glove bone two quail for us. 30 minutes later we wandered out with perfect quail. In case you aren't familiar with it, glove boning is HARD and quail are TINY. He did a beautiful job.

Only in retrospect did we realize how lucky we were.

BTW- Quail were stuffed with leftover holiday foie gras and wrapped in smoky bacon. Delish.
