I was thinking potato pancakes for dinner tonight to go with some german sausages I picked up at Trader Joes. I only have dutch yellow potatoes, no russets, in the house. Everything I read says that a proper potato pancake must be made with russets. If I make them with the dutch yellow potatoes, they'll be edible right? How bad could they be? Anyone have any feedback on this? Should I just cook the potatoes some other way and not waste my time making the pancakes?
