Tonight for dinner I poached some chicken breasts, dumped TJ's korma sauce over it (added a few spices to the sauce along with sauteed onion and sweet red pepper), put it over rice, and we had a great dinner.
Why haven't I been poaching chicken breasts before?
It is so much easier and lower calorie than sauteeing them, not to mention easier.
My question is, what other recipes can I make with them? We're especially fond of highly flavored ethnic foods-- Indian, various Asian, have just discovered and made a few Morrocan dishes, maybe Cajun, could be Italian. Anybody have any African recipes?
Your favorite recipes would be highly appreciated. My main criteria -- in addition to the above-- are that it be fairly quick and not overboard on fat.
