Planning ahead: Christmas Eve menu for 16?

Prime rib, roast goose, or leg of lamb? The problem with the latter two is that one goose, or one leg, won't do it for this many guests and I don't have a double oven. Ideas? Alternatives? (I start thinking about it now because a) I'm obsessive about a full-blown dinner, and b) I often do trial runs when I'm going to cook something new.
