I have a question for gourmet chefs. If I want to prepare a plank smoked fish fillet is it O.K. to buy wood at the hardware store - i.e. Ace, Home Depot, Loews, etc.. I have heard that most lumber is treated with chemicals - some with arsenic. Can anyone advise me on the safety of selecting wood. I live in the Northeast so alder wood is not available but I understand cedar and oak can be used.
