Philly first-timer; specific reccs

I will be in Philadelphia for the first time from monday to thursday in two weeks' time (I'm currently living in Providence). I'd appreciate any advice on:

1) Dim sum. Are there any good places with trolleys? If not, what is the best place for dim sum? Either traditional or new/creative.

2) Markets - are there any farmers'/other markets that would be running between monday afternoon-wednesday evening?

3) any particularly good food stores, specialty, etc?

4) Any restaurants that are special, couldn't find good equivalent elsewhere? Something that's a special philly experience (and I don't mean tourist destination - more a resto that for you symbolizes the best of philly's offerings). For Italian restaurants, I would prefer authentic Italian, rather than American-style "red or white sauce" kinds of places.
