Perfect Eggs?

A couple recent breakfasts gave me new found appreciation for cooks who have the touch for not only cooking perfect eggs but picking the best raw materials too. The soft-boiled egg at Cafe Fanny was simplicity itself, but made me sit up and take notice. The eggs at Hallie's were wonderful in the same simple way.

Who else do you recommend?
