pate brisee recipe needed

I want to make a savoury tart crust, but don't have a Kitchen Aid or Kenwood Chef. I've tried a couple recipes by hand, and ended up with a heavy, chewy crust every time. I'd appreciate a simple, well-tested recipe, and any tips you can provide (try have cold hands, etc.). And I don't want to use lard. Thanks.
