Paris restaurants in August advice

Hello

I will be in Paris with the wife for 4 days Sunday -Thursday in late August 19-23. I’m trying to put together a decent dinner or lunch itinerary. A lot of places are closed. I’ve been emailing restaurants asking if they will be open. So far I have come up with this loose itinerary. I usually only like to prebook one formal sit down meal per day and only have the stamina for one long 3 Michelin Star type meal when I vacation. Let me know if any of these are duds or if there is a place you know that will be open that I should try instead.

Sunday - fish la boissonnerie
Monday - Alleno Paris
Tuesday- le bon George’s
Wednesday - la bourse et la vie

I welcome any other suggestions. I like all foods.
